Cucumber rava dosa
This is my go-to option for those unexpected tiffin or breakfast moments. I prepare a vegetable rava dosa, incorporating vegetables directly into the batter. In this instance, I opted for cucumbers and used millet flour (though you're welcome to use rice flour as an alternative), and substituted millet rava for the traditional semolina. Without the need for maida, this quick and easy dosa can be made on the spot. The veg rava dosa retains its softness for several hours, yet when served fresh off the tava, it achieves the desirable crispiness akin to a regular rava dosa. Experimenting with different vegetables, such as avocados or zucchini, not only diversifies the flavors but also boosts the health quotient of the dish.

Omapodi, a delightful tea-time snack, is incredibly easy to make, with besan (gram flour) and rice flour being staple ingredients in most households. In just about 30 minutes, you can fry up a batch of these crispy omapodi discs, making it a perfect addition to your snack repertoire. Traditionally prepared during festivals like Diwali to be included in the festive Diwali mixture, omapodi can also be made into a thicker variety of sev by incorporating additional spices and flavors, resembling the taste of ghatiya.
