Ingredients :

3 1/4 cups bread flour
7 grams instant yeast 1 tbsp

1 tbsp honey

1 tsp cinamon powder
1/4 cup sugar to mix with cinnamon powder for the sprinkling
1/2 tsp salt
1/4 cup milk
1/4 cup water
2 tbsp butter
1/3 cup buttermilk
1 tbsp ground cinnamon for preparing cinnamon sugar
1 cup raisins

  • Method :

  • Warm up milk and water mixture , add little honey or sugar , add yeast ,allow to bloom if needed . pour into dry mixture .( For kneading with bread machine , follow video for steps) .
    Add raisins , salt , cinnamon .

  • Mix well . Knead dough . add butter , left over milk if any , continue to knead in the bread machine . I used the bread machine to knead and proof the dough . You can hand knead the dough for 10 minutes .

  • After the dough has proofed and risen well , take it to a floured surface , roll out dough to required size of the loaf pan . Use butter or milk to smear the rolled out dough .

  • Spread a mixture of cinnamon sugar all over .
    Roll up from the smaller end of the dough , as tight but not squishy.

  • Roll up and pinch the seams .

  • Put into a greased loaf pan . Cover and allow to rise one more time for an hour .
    Mid way preheat oven to 175 C , bake the bread for 35 minutes or till done .

  • Remove and smear melted butter on the top

  • Cool the bread completely before slicing .
