Recipe :
Ingredients :
2 cups unpolished barnyard millets , washed few times, and soaked for 8 hours
1/3 cup udad dal . washed and soaked for 3 hours
1 tbsp methi seeds washed and soaked with udad dal
Method
After soaking millets for 8 hours, rinse thoroughly with clean water and discard the soaked water.
Drain the udad dal and methi seeds , transfer all the above to a blender jar , and blend to a smooth paste or batter .
Add water just enough to get a thick dosa batter consistency .
Cover the ground batter to rest for fermentation either overnight or upto 8 hours in a humid atmosphere .
The batter ferments well, add salt , adjust consistency of batter by adding water if needed , mix well .
Grease a dosa tava, wipe well, heat it , reduce high heat by sprinkling water over the surface, pour batter in centre with a flat spatula, and quickly spread the batter in circular way arounfd the tava .
Cover to cook to get a soft , porous texture, add ghee or oil to cook , flip and cook if needed ,
Remove and serve this thin crispy dosa with your favourite accompaniments .
