Sponge dosa
One of my fav dish delicious soft spongy dosas.
with same batter you can make soft idlis too
Sagu is the perfect accompaniment ( not in pic )
though here i have other options :
No coconut dal chutney,
kara chutney
inji puli ( ginger tamrind spicy relish )
recipe for sponge dosa :
INGREDIENTS:
3 cups idli rice
1 cup udad dal
1 cup thin flat poha ( soaked in butter milk or little curd just for 15 minutes before grinding )
1 tsp methi seeds
Salt for batter.
METHOD.
Wash the dal and rice well, soak in clean water.
Soak the rice and dal separately. For minimum 5 hours.
Soak the poha separately
Soak the udad dal and methi seeds together.
After 5 hours grind the udad dal and methi to a smooth batter.Dont add too much water while grinding.Keep aside.Next grind the rice , also to a smooth batter.Adding little water to enable easy grinding.
At the last stage of finishing grinding the rice, add the poha , grind well now and the batter will become thick at this stage.
Remove the batter and now mix both batters well.
Leave to ferment. Prepare soft sponge dosas byb adding batter little thickly and not spreading too much,cover anc ook for more pores and spongy effect , add oil or ghee after the pores start appearing .
Serve with any preffered accompaniment .
