Pulinkari

Pulinkari / Pulinkari is a delicious slightly tangy gravy with a medley of veggies like pumpkins , colacassia, drumsticks , or just two vegetables like both varieties of pumpkins . Authentic Palakkad style Pulinkari is an absolute favorite and a staple in my house . I prepare it the way I have seen my mom make it . There are several minuscule variations in the ingredients used to roast and grind such as udad dal , toor dal , rice , however the main ingredients are coriander seeds , methi , red chilies and coconut . Given below is the method of my preparation.

Ingredients: A

1/2 tsp coconut oil

Pinch of asafoetida

3 tsp coriander seeds

3tsp toor dal

1/2 tsp methi seeds

2 red chilies

1 strand curry leaves

1/3 cup fresh grated coconut

Other ingredients: B 1.

2 cups assorted vegetables or two pumpkin varieties.

1 gooseberry size Tamrind , soaked in hot water and Tamrind juice extracted , about 1/4 cup. ( Or 1 tbsp Tamrind paste )

1/2 tsp turmeric powder

Salt

1 tsp red chilies powder

1/2 tsp jaggery powder

1 tsp coconut oil

1 red chilies for tempering

1/2 tsp mustard seeds

Method :

1. With 1/2 tsp coconut oil , first fry small piece of asafoetida, then roast other ingredients mentioned in A except coconut.

2. Remove when they turn aromatic and set aside .

3. Add the chopped vegetables to a vessel .

Add Tamrind juice , salt , turmeric powder , red chilies and powder , few curry leaves .

Allow to cook till just tender . Take care not to cook vegetables to mushy .

4. Meanwhile add the roasted ingredients to a blending jar , add coconut and grind to a smooth paste .

5. Check on the vegetables. If they are just about cooked , add the ground paste to the mixture , gently mix , add the jaggery powder . Allow to come to a gentle boil .

Switch off .

6. Prepare a tempering with 1 tsp coconut oil Pinch, add one red chilies for, mustard seeds , few curry leaves , pour this over prepared Pulinkari.

7. Cover and keep till serving .

Enjoy authentic Palakkad style Pulinkari.

All you need is a crunchy Pappadam yo finish a heavenly meal .
