Nendran chips /raw plantain chips
Delicious tasty plantain chips made Kerala style with raw nendran plantains and frying in coconut oil . very easy to prepare at home and avoid the much salty ones sold in stores .
Kerala sadya meals are special and one cannot imagine a full laden onam or Vishu sadya leaf without these nendran kai and upperi, with pappadam which makes a delightful combination for the array of many delcious dishes spread out .
Vishu and Onam are two major festivals which brings out the culinary best from Gods own country and one looks forward to the the vast banana leaf with most delightful dishes like thorans, kootus, karis, pulisseri,kitchadis and pachadios , besides the many payasam, sweet varieties , even pickles a re quite a few from spicy to sweet sour tangy like the puli inji, achar .
Ingredients
Raw nendran bananas
1 tsp turmeric powder
salt little water in a cup
coconut oil to fry
Method
Mix the salt and turmeric in water and keep ready
. Peel the raw plantain as shown by making a score with a knife, the peel will come off like a wrap ,
start slicing immediately and deep fry in coconut oil .
You can also slice directly into hot oil or seperately as i have done .
make sure to fry in small batches as the raw plantain slices will become dark . when the chips are almost done , sprinkle the salt turmeric water solution .
remove and drain the chips .
Store in a airtight container .
