Adai prepared with adai mix

'I have previously shared a recipe for making Adai by soaking dals and rice for a few hours, then grinding them to create a healthy and nutritious dish.

However, for those with limited time in the kitchen or seeking quick ideas for everyday delicious tiffins, the method of preparing premade mixes for various tiffin items proves to be quite convenient.

These pre-made mixes at home offer assistance when deciding what to make for a quick and delicious tiffin. The significant advantage is the elimination of the need to measure out ingredients every time you prepare this dish. Instead, you can simply pour out the required quantity of the mix, add water, make batter, let it rest for a bit, and then quickly prepare Adais.

This ready mix is also suitable for making quick instant kunnuku. By creating a thick batter, adding salt, and dropping small balls in hot oil, you can make a delicious snack for the afternoon.

At the beginning of each month, I plan a few selected snack and tiffin ideas. I prepare these homemade mixes in advance, store them in several accessible bottles, and then use them as needed.

These ready-to-make mixes are a great boon to send with those away from home who may not have kitchen gadgets for grinding. Simply paste simple instructions if sending them with a spouse or kids going away from home; they will appreciate these handy preparations.

While the market offers a plethora of ready-to-make mixes in mind-boggling varieties, one might wonder why make them at home.

The answer is simple: for quality ingredients, freshness, and, above all, cost-effectiveness. Include these mixes in your starter pack for cooking needs for kids going abroad or any family member leaving home, providing them with a convenient way to get started with their favorite dishes. If sending them out, make sure to mention the ingredients and instructions on how to use them.

Ingredients 

To make adai mix at home.

1/2 cup raw rice

1/2 cup Idli rice

1/3 cup Toor dal

1/3 cup Moong dal

1/2 cup chana dal

1/4 cup udad dal

2 tsp cumin seeds

1 tsp black pepper

4 red dry chillies

A generous pinch of asafoetida powder.

handful of curry leaves , washed dried . they should be crispy and dry .

Method

Clean,( not wash or soak in water...) ingredients and grind to a little coarse powder in the blender. only dry ingredients to be used to powder.

Another method is to wipe all the dry ingredinets between cotton cloth to remove any coating on the dals etc , if buying organic , you shouldnt worry .

I do have a recipe where you wash the ingredients well, air dry for about 2 hours, then roast them well, grind to a powder .

Store in an air tight container

Use , when required in small measures as per need.

To make Adai from this mix.

1. Measure out quantity of powder required to make adais.

2. In a wide vessel put the adai mix powder, add some water enough to make a thick batter.

Add water till you get a thick consistency.

Add required salt as it is not added in the home made mix earler.Add some curry leaves if you have not added any in the mix .

Cover and keep aside for minimum 1 hour though good Adais can be prepared even with 30 minute soaking.

To prepare adai

Heat a skillet grease well.

Add a ladle of batter and make thick adais as is normally done by making circles.

Add drops of oil around the edges to get a crispy end.

Let cook for few minutes flip and cook other side.

Serve hot with suitable traditional accompaniments like chutney, avial, jaggery, sambar.

Note.

Finely choped onions, grated ginger may be added to batter to make tasty masala adai.
