Elephant foot/ yam

  • It is named thus due to the resemblence of elephants foot, though the interior is light pinkish , brown and yellow.

  • It looks rugged but dont underestimate the yam by its rugged looks , the healthy nutrients that you can benefit by consuming this regularly , including in your menu will bring huge health benefits taking care of many disorders .

  • It is said to benefit those suffering from constipation, irritation of bowel, cramps , to help lowering cholesterol, relieves arterial blocks, and vein blocks as well .

  • Also consuming elephant yam regularly helps in maintaining blood sugar levels, also lowering the sugar .

  • Helps in weight loss and managing obesity .

  • It has trace elements that help in bone health Elephant foot yam is a rich source of trace elements like potassium, magnesium, selenium, zinc, phosphorous and calcium, that help in improving concentration and memory. It is helpful in improving immunity in the body.

  • It is a good anti-inflammatory agent , anemia, energy in the body .It also helps in slow ageing process, good for digestion, as a laxaztive , detoxifier, and improves condition of enlarged prostate glands .

  • Yam is used extensively in Ayurveda in treatment of several disorders like fatigue, constipation, inflammation, tumours, maintain healthy hormonal balance .

Nutritional Value of Elephant Foot Yam (Jimikand) Plant

  • Has high levels of carbohydrates, proteins , making it a good staple food, high levels of zinc, potassium, phosphorous , Vitamin B6 , calcium, VitaminA.

  • Other important constituents of elephant foot yam plant are steroids, phenols, alkaloids, flavonoids, and amblyone.

  • Containing about 5% of proteins, 18-24% of carbohydrates, along with about 72% of water, it is a quick energizer and is widely consumed in several parts of the world.

Chena kadi

Ingredients

1 cup cubed yam

1/2 cup moong dal

3-4 slit green chilies

1 tsp grated ginger

Pinch of turmeric powder

Pinch Asafoetida powder

2 tbsp lime juice

3 tbsp grated coconut

Salt

For tempering

1 tsp coconut oil.

1/2 tsp mustard seeds

1/2 tsp cumin

Curry leaves

Method

Pressure cook yam with moong dal ,green chilies , ginger , turmeric powder for 3 whistles .

In a pan add coconut oil , heat it , splutter mustard seeds , add curry leaves .

Open cooker , lightly mash the mixture . The yam must not be completely mashed . Adjust consistency according to needs . Keep it thick if having it as a side dish .

Pour the contents to the prepared tempering in the pan , allow a gentle boil , add salt, grated coconut .

Remove and allow to cool , add lime juice

Mix well and enjoy as side dish or to mix with rice . I do not prepare sambar some days , this delicious yam curry goes well with rice or chapatis .
