Seepu Seedai
Seepu Seedai or Surulu Murukku is a delightful specialty from Chettinad. Traditionally, it involves a distinct wooden flat board with etched horizontal lines, resembling a comb, on which the dough is flattened and curled to achieve its unique shape. The term "Seepu" translates to a comb in Tamil.
For those without access to this distinctive snack maker, a fork can be used as an alternative. Moreover, modern murukku presses come with various templates, allowing you to prepare a variety of shapes. In this recipe, I have utilized one such plate to create this flavorful and crunchy snack infused with the goodness of coconut milk.

Ingredients
1 cup rice flour ( available in stores for making snacks )
1 tbsp moong dal flour ( roast moong dal , powder it, and sieve it well ) or use ready moong dal flour from store, dry roast the flour lightly ,
2 tsp butter
1 tsp sesame seeds
1 tsp sugar
salt as needed
1/2 cup thick coconut milk , heat coconut milk till warm, add sugar , we will make the dough with this warm coconut milk and add little water later if it is not sufficient to make a smooth dough
oil for deep frying
method
1, roast the moong dal till aromatic. remove, keep aside to cool
powder it in mixie , sieve and use this flour .
2. in another bowl add rice flour, moong dal flour, sesame seeds, salt , and make a smooth dough with warm coconut milk and melted butter .(you can also add butter while heating coconut milk ,)
3. Take a murukku press and grease the inside, use the seepu seedai ( seepu murukku plate )
press out long strips of the dough on a plate and cut into smaller pieces. join each piece , take ends of both , shape into a ring with finger ,
press out sufficient strips of dough , and deep fry the prepared rings ,
the seepu seedai will not get too brown so , remove when lightly golden and crispy .
drain and store .
