Rava idli ( no eno no soda )
Delicious healthy diabetic friendly rava idlis that do not use Eno or baking soda, therefore suitable for all ages . even during this time of lockdown, you dont need ingredients like baking soda, baking powder or eno but rely on natural ways to ferment batter.
Ingredients
1 cup roasted rava/sooji
1/2 cup or as required buttermilk .
salt as required for batter
Tempering
1 tsp mustard seeds
1 tsp chana dal
1 tbsp finely chopped green chilies
curry leaves
chopped coriander leaves
1/4 cup grated carrots ( optional)
pinch of asafoetida powder .
Method
To a bowl add the rosted rava , add the buttermilk and make a batter by adding more water till it looks thick like normal idli batter.but not dry . in the beginning you can add little more water as the sooji will absorb water after few minutes. cover and allow to ferment overnight or few hours in daytime .
You will notice batter has become lighter but not doubled like normal idli batter as we are using only rava and not the regular udad dal and rice batter.
but there will be fermentation and batter will look foamy with bubbles.
add the tempering ingredients , add salt, mix gently .
grease idli plates and pour batter in idli plates, steam for 4-5 minutes till done .
serve these idlis with chutney, sambar or saagu .
