Multipurpose Idli dosa Batter
A simple solution to make one common idli dosa batter and prepare soft idlis, crispy hotel style dosas, sponge dosas and set dosas.
The best part is it is ground in the mixie itself , so small families can easily grind a batch without having to do bulk grinding in wet grinder. It is also better to grind fresh everytime rather than having to use week old sour batter .
I grind about three time s a week for my family and i dont feel the effort as it is done in the mixie itself . The uses of this multi purpose batter
1. plain dosa
2. masala dosa
3. Crisp paper dosa
4. set dosa/sponge dosa
5.Gundu paniyarams
6. Uthappam
7. sponge kushboo idlis
there are queries about the mixie heating up while grinding, it is easy to solve this, just keep the soaked ingredients in fridge or use chilled water for grinding .
The mixie remains cool through out
Ingredients
4 cups idli rice ...choose any cup but use the same for measuring udad dal also
1 cup udad dal
2-3 tbsp of sabudana / javarasi
1/2 tsp methi wash and soak for 5 hours.
Method
Grind them separately, mix well, allow to ferment overnight prepare idlis, dosas, set dosas, masala dosa, paper thin crispy ghee roast all with one batter for extra crispy paper dosa, add 2 tbsp rice flour to batter , before preparing dosas, mix well , can dilute batter a bit
