Lunch menu
A delicious 😋 but simple meal of drumsticks and lady finger with spicy carrot kari. Add a rasam and a Thogayal if you wish and the platter is complete.
However I was happy and satisfied with plate with just the sambar and the carrot kari .
Ingredients
Few Chopped drumsticks
1 tomato 🍅 chopped
1/2 cup cooked moong dal.
1/2 cup grated 🥥 coconut
2 slit green chilies
1 tsp cumin seeds
Pinch of turmeric powder
Pinch of asafetida powder
1 tsp chili powder
Salt
Curry leaves
For tempering
1 tsp coconut oil
1 tsp mustard seeds
2 broken red chilies
Few curry leaves
Method
Cook drumsticks in very little water along with chopped
tomato, slit green chilies, pinch of asafoetida powder
Add turmeric powder.
Meanwhile grind coconut cumin seeds, red chili
powder with 1 tsp rice flour to a smooth paste
Add the cooked moong dal to the 3/4 th cooked
drumsticks, dilute if needed. Add salt, add the ground
paste. Keep flame on low after adding the coconut
paste. Allow to come to one gentle. Oil . Switch off
Temper with coconut oil , splutter mustard seeds
red chilies, few curry leaves, add to prepared sambar
Makes excellent side dish for rice or idli dosa
