Sorghum bicolour a common species of jowar, native to Africa is an important cereal crop, used mainly for food, animal fodder, making of alcoholic beverages and biofuels. Jowar is a drought and heat-resistant plant which grows in an arid and dry region and forms the staple grain for poor and rural people.
Jowar is a towering plant growing over six feet tall, but many other varieties which are generally cultivated are dwarf breeds making it convenient for harvest. As it adapts well to any extreme climatic conditions it is believed to maintain a stable nutrition profile. It is generally red and hard when it is ripe and dried after harvesting to increase the shelf -life of the grain. you can add any flavours you like such as shredded cabbage, capsicums, finely grated carrots, chilies, coriander, curry leaves, pepper, and cumin.
Ingredients
1 cup jowar flour ( bought from store )
1/4 cup rice flour
1 tbsp udad dalflour ( optional ) you can add besan or skip.
salt asafoetida powder cuminseeds chilies
coriander leaves, curry leaves, thinly sliced vegetables dont add too many.
3 tbsp buttermilk
3 tbsp sooji can be added if you like a more crispy dosa, in which case allow batter to rest for 10 minutes.
The batter become little thick, dilute further according to pouring consistency.
add enough water to make a thin batter like that of rava dosa or need dosa type.
heat a dosa tava, pour the batter all over rapidly, dont try to spread with ladle.
allow to cook on medium flame, use ghee or sesame oil for the edges, flip and cook bith sides if needed .
remove and serve with your favourite accompaniments.
