Most fragrant Idli Milagai podi Whenever I grind a fresh batch I must have idlis immediately 😁. Although dosa , upma , Adai also taste good with podi , nothing can beat idlis with Milagai podi .

I have few recipes with small variations, however this one is the standard , my hubby approved.

Ingredients

1 cup chana dal

1 cup udad dal

3/4 cup black sesame seeds

2 cups red chilies ( mix of round , long and Kashmiri variety will give good colour )

I have used both round and long varieties. that video clip is missing , however you can use any one variety also .

Rock salt

Big piece of solid asafoetida

Few curry leaves.

Method

  • Roast each dal with a drop of oil separately till aromatic.

  • Roast sesame seeds when the pan is very hot without oil , it will start popping , remove immediately

  • Roast red chilies with required rock salt

  • Dry roast curry leaves

  • Fry asafoetida in a drop of oil

  • Allow all ingredients to cool

  • Powder in short bursts till required consistency.

  • We like a coarse powder .
