Coffee cake ( Eggless)
Delicious coffee cake can be baked in a jiffy in just a heavy kadai , with simple ingredients like instant coffee powder, flour and sugar . check my blog for more easy to cook recipes esp for beginners, students, travelers, vacationers
1. preheat a heavy bottomed kadai, place a plate inverted inside it, cover and heat for 5 minutes on high . If you want you can layer with salt in the bottom, place a small stand or a plate and keep the cake tin on it ,
Ingredients :
Maida/All Purpose Flour - 3/4 cup.
Powdered Sugar - 1/2 cup.
instant coffee powder or Cocoa Powder - 2 tbsp
Baking Powder - 1/2 tsp.
Refined Oil - 3.5 tbsp tbsp
buttermilk 7 tbsp
Vanilla Essence/Chocolate Essence - 1/2 tsp.
Baking Soda - 1/4 tsp.
tiny pinch of salt
some sliced nuts like almonds, walnuts or cashewnuts for garnish .
Method
Mix ingredients in bowl gently first add buttermilk to bowl, then add oil , baking powder, baking soda, vanilla essence, salt .
then add powdered sugar and flour .make a thick flowing batter, adjust consistency of batter with buttermilk, add little more to get the consistency . only if necessary.
pour batter in greased cake tin , tap lightly sprinkle nuts of your choice on top as garnish bake in a preheated cooker , or vessel , or kadai for 25 minutes or till done . garnish with chocolate chips if you like .
