Delicious crispy crunchy Shakkarpara for teatime or for Diwali, makes an excellent addictive snack . This is a very easy recipe and good for beginners to try with success. this method is by far the easiest and you cannot go wrong . you can make this thin syrup in advance and store in fridge and make sweet biscuits when ever you want to even while making your daily chapatis, you can quickly roll out one or two chapatis with this recipes and use either maida or whole-wheat. Doesnt need great planning .

Ingredients:

1/2 cup sugar

1/2 cup ghee

1/2 cup water or milk

2 cups maida

Pinch of salt

Pinch of cardamom powder

Method:

  1. Take 1/2 ghee and 1/2 water or milk and 1/2 cup sugar , mix all three and boil till frothy , no need for sugar syrup or string consistency

  2. Add a pinch of cardamom powder .

  3. Remove when bubbly and keep aside till it gets little warm .

  4. Now add the flour , pinch of salt to a bowl, add liquid slowly ladle by ladle and not all at once . The dough must be firm . prepare dough like you would for pastry, dont over knead .

  5. Must bind well.

  6. Rest for 5 minutes .

  7. Divide into balls.

  8. Roll out into thick chapatis as shown in the video .

  9. Use a knife to make the strips and either make a square cut or diamond shape .

  10. Trim the ends . Seperate teh squares , they will fall off easily. Deep fry in medium heat , turning them over continously for even frying.

  11. Take them out before theuy become too brown .

  12. These will become very crsip after cooling well , so keep aside for 3 hours .

  13. Store in air tight container when cooled. They will stay good for a week.
