Pumpkin 🎃 Adai
Yellow pumpkin /also called parangikai is found in many sizes and colours from light orange , yellow to deep orange .
Pumpkin is a healthy food rich in nutrients and compounds that can support blood sugar control. Medical studeis have shown it may lower blood sugar, improving diabetes management and helping slow the progression of the disease in some cases.
According to Healthline .com A typical serving of pumpkin is high in fiber and low in carbs. While pumpkin has a high glycemic index, it has a low glycemic load, meaning that it’s unlikely to have a significant effect on your blood sugar as long as you exercise portion control.
We can include them in many forms in our daily diet such as poriyals, kootu , as a puree to make chapatis, parathas, breads and so on . how ever we must not use them in more processed form if we want to reap the benefits of its nutrients .
In the recipe above for preparing pumpkin adai , i have added pumpkin pieces to blender, added red chilies , some curry leaves, and added the puree to a batter of lentils .you can also soak and grind fresh batter for adai or dosa and add the puree .
Ingredients
2 cups batter of adai or dosa
1/2 cup pumpkin puree
few curry leaves, salt
a pinch of asafoetida powder
mix batter well , prepare thick or thin adai or dosa .
Heat a dosa tava , wipe well , add the batter , as it cooks , add sesame oil around edges, flip and cook both sides .
Note :
After adding pumpkin puree batter becomes very soft and will yield very soft dosa or adai so you can adjust batter consistency or texture of batter by adding 1-2 tbsp of rice flour for more crispy or thicker adai .
Whether you eat it as a fruit, vegetable, pie, puree, or you consume its seeds, pumpkins are highly nutritious, delicious, and they offer many health benefits. Apart from being loaded with micronutrients and providing many benefits, pumpkins are said to be good for people suffering from diabetes, and can help in lowering the risk of the condition in others.
