Poori Aloo sabji
There are many ways to enjoy pooris, with the traditional yellow potato masala, or potato made into a ,ight gravy with chunks of soft melting potatoes coated with amazing flavours, dont get fooled by the ordinary looking potatoes, i assure you , this is yet another way to have the pooris with chunks of soft potatoes and a gravy that tastes so divine .
Ingredients
1 tbsp ginger green chiliy paste coarsely ground
2 tbsp oil
1 tsp cumin seeds
1 tsp whole dhaniya
pinch of asafoetida
pinch of turmeric powder
salt
1/2 tsp kashmiri chili powder
2 tsp coriander powder
2 tomatoes finely chopped
6 potatoes, washed , peeled . chop the potatoes into big cubes .

1 tsp fennel seeds
Method
Take a pressure cooker, add oil , heat it , add cumin seeds , add whole coriander seeds , turmeric powder, saute for a minute till aromatic, add fennel, add a pinch of asafoetida powder ,add chili powder , coriander powder , , add chopped tomatoes, , sautee till a fine aroma comes.
Then add potatoes , mix well , add water , salt, cover and pressure cook for 3 whistles .
Switch off , allow to cool , remove the lid, and liuguhtly mash thenpotatoes.
Agai boil for 2 minutes, garnish with chopped coriander leaves .
add ghee on top, mix well .
