Peanut Balls
Delicious easy to make peanut balls with jaggery syrup, usually prepared for Karthigai festival or for anytime snacking . Considered healthy compared toother sweets snacking .
Ingredients
1 cup peanuts
3/4 cup powdered jaggery
method
roast peanuts, remove the skins , and use.
melt jaggery , use 1/4 cup water to melt, filter the syrup , use to prepare a thick syrup of a hard ball consistency syrup .
when you roll a drop of the jaggery syrup, it must form a smooth firm ball and will make a thud when flung on a plate , to confirm .
mix the roasted peanuts with required jaggery syrup , and using a ladle , scoop out portions to prepare small balls, you can use rice flour or ghee to handle the sticky warm mixture . Take out required quantity of the peanuts mixture , use rice flour or ghee to handle , roll into small balls.
Prepare in batches as the mixture will begin to harden quickly as it starts cooling .
