Orange and cranberries cake
Orange and cranberries are a great team to make yummy cakes and I often make these during the season when we get plenty of luscious oranges.
This Orange flavored , cranberries studded delicious cake is super moist and not too sweet.
One gets a great fruity flavour in every slice and its a delight to savor the cake. I love this cake with my morning coffee or evening tea as I do not make this too sweet as the generous Orange glaze that is poured on the cake gives it a creamy sweet flavour.
For a mouthful of flavoured textures, try this cake and you will not be disappointed. I made some cup cakes too to send them to school with the snack box.
Ingredients
1 1/2 cups + 1 tbsp all purpose flour.( the 1 tbsp is for for dusting pan )
1 cup granulated sugar
1/2 tbsp baking powder
1/2 tsp baking soda
Pinch of salt.
1/2 cup buttermilk
1/3 cup oil
1/2 cup freshly squeezed orange juice
1 tbsp orange zest
1 tsp vanilla extract
3/4 cup whisked yogurt
1/2 cup dried cranberries.
3/4 cup confectioners sugar
3-4 tbsp orange juice. ( for the glaze )
1/2 cup thick cream or whipping cream ( optional )
Method
Preheat oven to 180 degrees C
Grease a bundt pan and dust with 1 tbsp all purpose flour.
Tap out excess flour
In a bowl first sift all the dry ingredients.
In another bowl mix all the wet ingredients , keeping aside some buttermilk or whisked yogurt for the last step while getting the right batter consistency. So do not add all the yogurt in one go..including the cranberries.
Now add the wet ingredients to the dry and fold well taking care not to over mix. Add some more buttermilk or yogurt to get the batter to a thick but pouring consistency. Batter must not be clumpy.
Pour batter into the bundt pan and bake till a skewer comes clean when inserted..around 45 minutes.
Run a knife around the edges of the cake to loosen.
Take a plate and place the bundt pan on it, turn upside down immediately.
Cool the cake after easing out of the bundt pan completely on a wire rack
To prepare the orange glaze.
In a bowl add the confectioners sugar, thick orange juice and mix well. Add the thick whipping cream or thick heavy cream . Gives added flavour. Normally glaze does not require this cream , I added it to make it even more tasty.
Poke several small holes with a fork or a sharp thin toothpick around the top of the cake. Pour the prepared glaze around it and drizzle liberally.
Your most aromatic orange flavored cake is ready.
