These unique and tantalizing Medhu Pakoda make the perfect snack for either afternoon or evening. They are prepared from a mixture of chana dal powder or besan and rice flour, then deep-fried to achieve a delightful crunch. These fritters are a staple in South Indian snack stalls, often enjoyed alongside other quick bites.

Particularly famous in Chennai, Medhu Pakoda first caught my attention there, though I was initially unaware of their wider popularity. I must confess, they are irresistibly delicious and quite addictive! Unlike traditional snacks such as Medu Vadai, Bajji, or Bonda, Medhu Pakoda stands out with its unique texture and flavor —crispy on the outside yet incredibly soft on the inside. I've even experimented with making them in an appe pan to create a less oily version, which turned out quite tasty as well.

This recipe is an excellent alternative to Medu Vadai or the typical Bajji or Bonda, especially since it doesn’t require any soaking or grinding of ingredients, making it wonderfully simple to whip up anytime. Medhu Pakoda can be made on the fly, perfect for serving as an evening tiffin accompanied by chutney and some sauce.

At the end of the recipe, I've also included instructions for preparing them in an air fryer, offering a healthier option that doesn't compromise on taste.

Ingredients

1 onion finely chopped

1 tbsp chopped green chilies

chopped coriander leaves

1/2 tsp soda

1 tbsp butter or ghee or oil

1 cup gram flour /chana dal flour

3 tbsp rice flour

salt

Method

Cream butter and soda well till pale and creamy

Add remaining ingredients and make a sticky batter.

Prepare batter with very little water .

Heat oil , check the temperature by dropping a small pinch of ball in hot oil, it must come up sizzling .

wet your fingers,take a small portion of the batter and shape into a ball , drop in hot oil , contiue to prepare more with batter , without crowding the pan .

allow to deep fry till golden brown and looks crispy on exterior .

remove and drain .

serve hot crispy yummy methu bonda with tea or coffee .

Airfryer method :

Prepare the Medu Pakoda batter as per the recipe provided above. Be sure to include 1-2 tablespoons of butter or oil to achieve the right consistency for the stiff batter.

While using an air fryer is a healthier option for making snacks, it's important to note that adding 1-2 tablespoons of oil, butter, or ghee, as specified in the recipe, is crucial for retaining that delightful fried flavor. Remember, since we're not deep frying, we're already cutting down significantly on calorie intake.

Method :

Prepare small balls of the mixture with moist hand and place around the basket on a parchment or without . Preheat the airfryer at 180 C for 2 minutes .

Bake the Medu pakodas in the airfryer at 180 C for 10 minutes .

In between open the airfryer basket and toss the pakodas or flip them around for even browning .

For darker colour , set the temp to 200 C and bake for 2 minutes . But you need to be careful not to scorch them .

Remove the Medu pakodas and continue to bake the remaining balls in the same manner .

These airfried medu pakodas will taste just like the fried ones . Allow to cool before you bite into them as they can be incredibly hot .
