Khara Poli πŸ˜‹πŸ˜‹ or spicy poli which is almost like the paratha but prepared differently by patting the soft pliant dough on a greased sheet or plantain leaf, the spicy ball of filling placed in the centre, the ends gathered up, to form a ball, then patted to preferred thickness of a round paratha style roti /poli or boli as it is called in Tamil .

Usually all purpose flour is used to prepare this poli , however you can also use whole wheat flour , the pictures of the poli prepared with whole wheat flour are shown at the end of the post .

These can be healthy options to using whole wheat flour rather than all purpose flour , moreover they come out equally good and little on the crispy side .

However if you want the exact shop style taste and texture, use all purpose flour to prepare these delcious poli which are almost similar to parathas but not quite the same .

Everyone loves the jaggery , coconut , lentils sweet poli /boli , however we love the savoury version more and usually we prepare both at the same time to balance the flavours . whichever way and type there is no denying the mouthful of yumminess this sweet preparation has .

we love it more than the sweet version and my hubby swears the home made ones are the best 😁recent afternoon Tiffin with tea . The spicy Poli with tea was heavenly. Will post a longer video . Meanwhile this is very easy to prepare .


Ingredients

1 cup all purpose flour
Pinch of salt
Pinch of turmeric powder
1 tbsp oil
Water enough to prepare a smooth pliable dough

Method

Take ingredients to a bowl . Add water little by little till you can get a smooth soft dough . We need a pliant dough .
Cover and rest for at least 30 minutes though resting for 2 hours will make it even easier and smoother dough .

Filling

Firstly Pressure cook with very little water :( Filling can be prepared by using only mashed potatoes too )
Peeled potato chunks
Chopped beans
Chopped carrots
Pressure cook 3 whistles
Next Mash them after removing from cooker .

Next Add 1 tsp oil to a pan , add mashed veggies , chili powder , coriander powder , salt , pinch of garam masala . (Add ginger garlic paste optional though )

  • Add chopped coriander leaves . Mix well . The mixture must be smooth . Make sure filling is spicy .

  • Make small balls of the filling when cooked .
    After resting dough ,make small balls of the rested dough .

  • Take each ball , flatten on a greased paper or plastic sheet , place the ball of filling in centre , cover with the dough by pulling the dough from all sides till you fully cover the filling ,

  • Remove excess dough by pinching off the top , now place seam side down and flatten evenly on the sheet .

  • It is easier to roll in between two parchment sheets or press evenly with fingers .

  • Place on a heated tava , cook on both sides . Use ghee or oil . Remove when it puffs up or shows brown spots .
