Mini coconut 🥥 buns .

 The process of kneading dough for bread is remarkably simplified by using  a mixie or blender jar—a common kitchen appliance found in most homes.

Previously, I've demonstrated how effectively a mixie jar can be used to knead small amounts of dough for chapatis by running it in short pulses. This same technique can be applied to bread dough, eliminating the messy and tedious task of manually adjusting flour and water to achieve the right dough consistency. When the correct quantity of liquid is measured according to the recipe, using the mixie jar can produce a dough comparable to one kneaded in a stand mixer.

Once the dough is removed from the mixie jar, minimal effort is needed to shape it into a smooth ball for proofing. The majority of the kneading work is accomplished within the jar itself, making this method incredibly convenient.

This approach is particularly beneficial for those without a stand mixer, those who prefer not to invest in one, or individuals seeking quick solutions for making small batches of bread dough. It is also a boon for the elderly or anyone who finds traditional hand-kneading, especially the rigorous 10-minute counter kneading, to be challenging or painful. This technique promises ease and efficiency in dough preparation.

Ingredients

  • 1.5 cups all purpose flour, substitue with flour of your choice . here I am using all purpose as I wanted to find out how a dough kneaded in mixie would come out . As a test you can say .

  • 3 tbsp melted butter or oil .

  • 1/4 tsp salt 1.5 tsp yeast ( i have used instant yeast ) .

  • 1/3 cup warm water or milk to add the yeast .

  • 1 tsp powdered jaggery or sugar .

  • 3-4 tbsp extra milk to be added in intervals as we switch on and switch off the mixie , check on contents , see how the dough is looking and add accordingly . dont worry if dough is a little sticky , but dont add more than the qty mentioned .

  • Remove the dough from the jar and contnue to knead and bring it together , it is ok if the dough is loose , but must not be dry dough when you remove from the jar .

  • As you can see from the video i have shown all the steps, how the dough looks when you pull it out of the jar, it is done and needs just a shaping to a ball to keep for further proofing on the counter ,also note the jar isnt messy or too sticky, and looks almost clean ,believe me it is no work at all cleaning the jar as many would think otherwise

Method

  • After few quick turns in the mixie jar, take out dough , knead to a smooth round ball, place in a greased bowl, cover and allow to proof for a hour or till doubled .

  • Take out the fermented dough on a counter and shape as you need you can make small rounds of ball , arrange on a greased baking tray to make nice dinner rolls, hamburger buns, ladi pav buns for paav bhaaji, or even as a single loaf, or long subway style buns .

  • The choice is endless, as we have a good basic dough ready .

  • I have used just 4 balls of dough to show what we can do with this dough . the remaining dough can be refrigerated for later to make a pizza base or any other breads of your choice .

  • Pinch off required small balls , cover for 15 minutes, then shape as shown , flatten into a oveal shape, fold and arrange on a tray .

  • The buns will proof and become larger on resting , brush with milk on top carefully, sprinkle with sesame seeds if you like , bake in a preheated oven at 180 C for 25 minutes or till done .

  • remove from oven when tops are looking golden , brush with melted butter.

The filling

  • Just mix some dry dessicated coconut with chopped dry fruits like walnuts, pistachios, or cashew nuts, add some raisins.

  • 2 tbsp of powdered sugar.

  • 1 tsp of ghee or butter.

  • 1 tbsp of milk powder ( optional ) some tutti fruti if you have , mix well, and open the flap of the bun slightly, stuff with filling and serve .

  • You can also use these buns to fill with a savoury stuffing like potatoes or any spicy veggie filling for savoury buns .

  • You can just smear some cream cheese, or use a cream filling instead . you can do so many things with the fillings .

  • while the typical bakery coconut buns or thengai buns are baked as a huge round of bread with the filling , i have made them smaller as small hand pies and used a similar filling .
