Aloo ki sabji | no onion no garlic
Delicious simple aloo sabji for pooris or chapatis that do not need onions or garlic yet the taste is simply heavenly with few spices added . check my blog for more such easy to cook recipes .
Ingredients
1 tbsp oil
1 tsp cumin seeds
1/4 tsp methi seeds
3-4 red chilies of medium spice
1 tsp whole dhaniay ( coriander seeds )
1 tsp fennel
2 bay leaves
1/2 tsp turmeric powder
1 tsp kashmiri chili powder
salt as needed
1/2 tsp ginger powder
2 tomatoes pureed
1 tbsp red chili powder
1 tsp garam masala
1 tbsp coriandedr powder
1 tsp cumin powder
a pinch of asafoetida powder
chopped coriander leaves for garnish .
1/2 tsp kasurimethi
3-4 small or medium potatoes peeled and pressure cooked and cubed .
Method
Take a pan, add oil , heat it , add cumin seeds, fennel, methi seeds , whole coriander seeds , sautee all this in oil . Add the red chilies, add 2 bayleaves, add tomato puree, turmeric powder, asafoetida powder, sautee well.
when the puree is cooking and thickening, add other powders , ginger, coriander powder, garam masala, red chili powder , salt. add in likttle water, cover and cook till no raw smell and some oil will be released, the mixture gets thick, add the cooked cubed potato chunks, add in more water, smash few potatoes not too much , to help thicken the gravy .
Garnish with coriander leaves, check for salt. lastly add in crushed kasuri methi leaves for aroma.
Serve hot with pooris, chapatis .
