Baking home made subway breads or any bread for that matter , is not at all intimidating , if you have grasped some simple bread making techniques. The ingredients though simple must be fresh and kneading is the key .

It can get a little stressful and the temptation to keep adding flour to a sticky dough after the mixture has risen , is very high ,but you must resist and not give up, as the gluten forms, the dough behaves well. There is a satisfaction when you reach that stage and you know you are going to get a good bread .

Most of the baking actually goes in waiting time and actual work hardly takes any time . there are long periods of waiting time so baking can be done leisurely as you just cannot hurry with proofing etc. I usually start baking around the time i do my regular cooking for the day so by the time i have finished my kitchen chores, most of the baking works is almost done , except proofing and popping into the oven part .

Coming to the subway breads, it was on my mind for sometime , i have baked with whole wheat flour some stuffed breads somewhat similar to subway breads , so let us see how easy it is .

Homemade Subway Bread| Subway breads

delicious pillowy soft subway rolls or sub way breads that can be baked at home easily with either wholewheat flour or all purpose flour . Use these breads to whip up yummy veg stuffed subway , the way you like . There are no hidden , unnecessary ingredients to making this bread and so you know you are eating good old home baked stuff.

Ingredients

  • 3cups all purpose flour

  • 2tbsp sugar

  • 1cup warm water

  • 1tbsp active dry yeast

  • 4tbsp yogurt

  • 1tsp salt

  • 2tbsp olive oilpreferred or cooking oil

  • 1 tbsp black sesame seedsfor sprinkling on top of buns ( optional )

Instructions

  1. Add 1 cup warm water to a bowl , add 2 tbsp sugar ( needed for yeast to activate ) 1 tbsp active dried yeast stir mixture well, allow to activate .

  2. In another bowl, add 3 cups of all purpose flour sieved . add 1 tsp salt after it has activated, now add the yeast water mixture to this flour, add 4 tbsp curd 2 tbsp olive oil

  3. mix well with a wooden spoon bringing all the ingredients together . try to bring the dough together in the bowl with the help of a wooden spoon or use a stand mixer, if you have one , though not required .

  4. when the mixture looks combined and shaggy, turn it over to a floured surface, and knead it will be sticky initially, so try not add any flour except a dusting to ensure the perfect bread dough soon the dough will come together after 10 minutes of kneading , it will look soft and supple.

  5. at this stage, shape into a smooth round ball by tucking the ends below and placing in a greased bowl for it to rise cover with a cloth or clingwrap .it will take about an hour . after an hour, take out the risen dough to a work surface. gently flatten it , and divide into equal portions .

  6. i had not done this as i wanted breads in different sizes . take each ball, roll it to a round shape and place it on the counter, flatten it out to a rectangle, either with your fingers or use a roller, then roll up the rectangle along the length to a cylinder like shape,like a short cucumber tuck both ends of the cylinder into the bread itself, and arrange on a greased baking tray or on a parchment lined tray . make sure to leave space between breads while getting proofed .as they will stick to one another during proofing .

  7. at this stage itself brush the rolls with milk , and sprinkle sesame seeds . This is purely optional , you can keep it plain too .do not brush with milk after it has proofed, as the bread might flatten or sag . but do brush with milk gently so that you get a beautiful colour on top while baking .

  8. preheat oven to 200 C and bake for 18 minutes approximately .depends on your oven type remove from the oven when they have browned lightly, brush with melted butter and remove from the tray and allow to cool on a rack .

  9. Enjoy super soft subway bread home baked !
