Short cut idlis
This is a great boon to those pressed for time or not having a grinder to grind a idli or dosa batter. so by using mixie, and grinding only udad dal , you can get excellent idlis, by adding rice flour to ground idli batter I call this my cheat idli recipe which is great for emergencies and also doesnt compromise on taste, no
use of soda, or eno salt unecessarily. This way you get the taste and texture of a normal ground batter idli or dosa. Elders and seniors living alone with not much strength to take care of grinding for batter all by themselves can easily follow this recipe. As soaked udad dal is so much easier to grind in one load to a smooth shiny batter than grinding idli rice, as it takes more time, another advantage is reduced soaking hours as we need to soak only udad dal for 2-3 hours, grind
batter, mix and ferment in a short time. There is another advantage, you can also bulk grind udad dal and keep in fridge and use as required, even for 4 idlis or dosas, you can take out the required already ground udad dal batter, mix rice flour in correct proportion, keep for fermentation which may take less
time as the udad dal batter in fridge will continue to slow ferment in fridge and will help in giving a quick batter For example if you take out 1 ladle of udad dal batter, add 3 ladles of rice flour, make a batter, allow for fermenting use up all the stored udad dal batter this way or even use some of it for making perfect crispy medu vadas to go with idlis .
Ingredients
1 cup whole udad dal , washed and sokaed for 2-3 hours .
3 cups rice flour
salt for batter
oil or ghee for preparing idlis or dosas
Method
Wash and soak udad dal for 2-3 hours, grind to a smooth thick batter .
Take this batter to a bowl , add 3 cups of rice flour , add enough water in batches, to prepare a idli batter.
For even consistency of batter, you can blend this mimxture for few seconds
Take this batter to a bowl, cover and keep for fermentation .
Batter would have fermented well . add salt, mix gently , grease idli mould , add batter in each mould, keep in idli steamer and steam till done .
You will be surprised how great these idlis come out with less effort .
Serve with chutney and sambar .
