Ingredients
1 1/2 cups flour ( wholewheat and all purpose )
3/4 cup milk
1.5 tsp yeast added to 5 tbsp of warm water or milk .
3/4 tsp salt
1 tsp jaggery added to warm milk or water to activate yeast .
2 tbsp melted butter or oil
1 tbsp sunflower seeds
1 tbsp flax seeds . ( adding seeds is optional )
This is a no knead bread recipe therefore easy and everything is done in the bowl .
The dough is taken to the board only for shaping .
Method
Activate yeast by adding to a bowl / glass , add some warm water ,
1 tsp jaggery or sugar , stir well .
Cover and keep for 5 minutes .
Take a bowl , add the flours , salt , sunflower seeds , flax seeds , mix well , add melted butter , add the activated yeast mixture , 3/4 cup milk little by little or as needed to make a sticky dough in the bowl .
With a spatula make a rough sticky dough which must be fully moistened . Make a rough moist ball of dough .
Cover and allow to rest for 30 minutes .
After 20-30 minutes , Check on the dough in the bowl , with a spatula turn the dough by lifting and folding onto itself few times till a smooth ball is formed in the bowl .
Once again cover and rest , this time till it is doubled .
After dough has doubled , take it to a floured surface , shape into a rectangle, flatten lightly with a rolling pin , fold and roll up into a log according to size of the loaf tin .
Make sure to grease the loaf tin , place the log of dough in the tin , cover and allow to proof again for about 45 minutes .
Just before the 45 minute mark preheat oven to 180 C , brush the bread dough with milk , bake in a preheated oven at 180 C for 25 minutes or till done .
Brush the bread with melted butter .
Allow to cool before slicing .
