Festival meal with elaneer payasam

A typical festival lunch will include a payasam either milk based or jaggery . This is a simple but delicious payasam made of tender coconut flesh .

Elaneer payasam ( tender coconut payasam )

Ingredients:

Elaneer Payasam, also known as Tender Coconut Kheer or Coconut Water Payasam, is a refreshing and delightful South Indian dessert made with tender coconut water and coconut flesh. It's a cool and sweet dish, perfect for hot summer days or as a refreshing conclusion to a meal. Here's a simple recipe for making Elaneer Payasam:

Ingredients:

  • 1 cup tender coconut water

  • 1/2 cup tender coconut flesh, finely chopped

  • 1 cup thick coconut milk

  • 1/2 cup condensed milk (adjust to taste)

  • 1/4 cup cooked sago pearls (optional)

  • A pinch of cardamom powder

  • A few saffron strands (optional)

  • Chopped nuts for garnish (cashews, almonds, pistachios)

  • Edible rose petals for garnish (optional)

Instructions:

  1. Prepare Sago Pearls (if using):

    • Cook sago pearls according to the package instructions. Drain and set aside.

  2. Combine Coconut Water and Flesh:

    • In a mixing bowl, combine the tender coconut water and finely chopped tender coconut flesh.

  3. Add Coconut Milk and Condensed Milk:

    • Add thick coconut milk and condensed milk to the bowl. Adjust the sweetness according to your taste preference.

  4. Add Cooked Sago Pearls (if using):

    • If you're using cooked sago pearls, add them to the mixture. Sago pearls add a nice texture to the payasam.

  5. Flavor with Cardamom and Saffron:

    • Add a pinch of cardamom powder for flavor. If desired, you can also add a few saffron strands soaked in a tablespoon of warm milk for extra fragrance and color.

  6. Mix Well:

    • Mix all the ingredients well to ensure they are thoroughly combined.

  7. Chill:

    • Refrigerate the Elaneer Payasam for at least 1-2 hours before serving. This dessert is best served chilled.

  8. Garnish:

    • Before serving, garnish the payasam with chopped nuts (cashews, almonds, pistachios) and edible rose petals if available.

  9. Serve:

    • Serve Elaneer Payasam in individual bowls and enjoy the cool, refreshing taste.
