Coriander powder
Green coriander powder is a handy condiment to have in the kitchen to flavor so many dishes with its vibrant colour and flavour . the aroma is so good and acts a great taste enhancer after a dish is completed, a sprinkle of his powder to many sabjis and dry curries gives that ultimate edge . It is also handy to have to prepare many chaat items at a moments notice .
We may not be having the chaat chutneys all the time in the Kitchen or we may not be able to get fresh coriander leaves from the market , so having this dry green powder is very handy to prepare the green chutney . it is also useful to prepare dry chutney varieties for longer shelf life .
There are two ways you can fry fresh green coriander leaves and store for future use . One is by drying them in the refrigerator by storing in a net bag or paper bag . The other is faster and quicker way by using airfryer .
How to dry coriander leaves in airfryer.
Wash and pat dry the leaves in between paper towels .
Place the dry leaves including stems at the bottom with mesh on top so that the leaves won’t fly inside .
Set temp to 150 C , for 6 minutes . Check in between to ensure even drying . Remove when it is crisp . It will crush easily . It may take extra time . Stems were thicker so it took more time , but with checking in between you can ensure they don’t dry too much losing colour .
Powder in small mixie jar , sieve and store the powder to flavor dishes .
Fresh coriander leaves powder is very fragrant and has many culinary uses. Esp if you run out of fresh leaves for chutney , the powder can be used and it tastes good . I use it to flavour Rasam too .

You can use a microwave too for quick drying .
As I do not have a microwave I always store excess leaves by washing, draining the leaves, spreading on a cloth for few hours
Then I pack them in fruit net bags or in paper bags in the fridge. Storing in fridge will retain the color and even drying.
Within a week the leaves are dried ready to be powdered and used in many ways.
Same procedure for drying all greens .
I prepare methi powder, spinach powder, mint leaves powder, curry leaves, green chilly powder, drumsticks leaves etc by drying in airfryer .
The powders come handy to prepare chutneys, flavoring curries, preparing variety rice, thokku, to spice up buttermilk etc.
