Semolina Mango cake
Ingredients :
3/4 cup sooji / semolina to be powdered finely
1/3 cup sugar ( for mild sweet cake , increase if you like sweeter cake )
I was using a very sweet ripe mango so 1/3 cup was enough
1/3 cup milk to be used to adjust batter consistency after adding mango pulp only if required .
1 big ripe mango
3 tbsp oil
3/4 tsp baking powder
1/4 tsp baking soda
Chopped nuts for garnishing
Method
Peel the mango and extract pulp Blend to smooth consistency .
I got 3/4 cup pulp with lot of juice .
Blend the semolina in a mixie to fine powder
Take a bowl , add the powdered semolina , add the mango pulp , mix well ,add oil , add sugar , mix well , if needed add milk to get the batter consistency .
I didn’t have to add extra milk as the mango was very juicy and I could make the batter .
After mixing , cover and allow to rest for 30 minutes so that the semolina will become softer .
After 30 minutes , mix the batter which would have thickened a bit , again adjust with few drops of milk only if needed .
Add in the baking powder , baking soda , fold gently .
Grease a cake tin , dust with flour , remove excess flour or use butter paper , pour the cake batter into the tin , tap once or twice to level , sprinkle nuts on top ,
Bake in a preheated oven at 180 C for 30 minutes .
Oven timings will vary .
This cake can be baked in a heavy pan Also over gas , by placing the pan on flame.
Preheat for 3 minutes on high , reduce flame , place a stand inside the pan , place the Cake tin on top of the stand and Cover well with a lid ,
bake on medium to low flame till done .
You can use a cooker also as a container .
Remove the gasket , pour some salt on the base , place a stand , cover and preheat , place cake tin on the stand , cover cooker with lid ,
do not place the whistle on cooker .
the flame must be kept on medium for first 10 minutes then reduce completely to low till baked .
Try to place the cake on a higher stand inside to prevent scorching quickly.
