While many opt for sambar sadham or sambar rice using leftover rice, dal, and sambar, this recipe takes you on a journey to craft it from scratch with unparalleled simplicity. The infusion of freshly ground spices imparts a captivating aroma, and the addition of a tablespoon or two of ghee elevates it to a taste sensation.

Sambar sadham need not be intricate; by adding two or three, or even a variety of vegetables, you can enhance its nutritional value and satiating appeal. While a straightforward one-pot method aligns with this recipe, I'll guide you through a simple two-step approach for an exceptional culinary outcome.

Ingredients

1 cup rice washed

1/2 cup toor dal , washed and soakedc for 15 minutes if possible .

Cook both rice and dal with a pinch of turmeric powder in pressure cooker by adding 4 cups water and allowing 5 whistles so that rice and dal cook to a mushy consistency Keep this rice and dal mixture hot and ready in cooker .

Roast the following with

1/2 tsp coconut oil or ghee, fry a small piece of solid asafoetida , keep aside in the same pan , roast the following till aromatic .

1.5 tbsp coriander seeds

5-6 red chillies of both medium and spicy varieties.

1 tsp udad dal

1 tsp chana dal

1/2 tsp cumin seeds

20 pepper corns

1/4 tsp methi seeds

some curry leaves

1 tsp turmeric powder to be added just before removing from heat .

switch off heat after adding turmeric powder in the roasted ingredients . some grated coconut can also be added to the roasted ingredients and fried for a minute or two . how ever i have skipped coconut .

cool ingredients and powder to a fine texture in the mixie . keep this aside .

To prepare sambar sadham

1 lime size tamrind ball , soaked in hot water and juice extracted .

Other ingredients

salt as needed ,

red chiliies,

curry leaves ,

ghee ,

turmeric powder .

Method

To a pan add 1 tbsp ghee, add 2 red chillies, some curry leaves , add some shallots about 20 nos, and sautee them , add other vegetables according to your need .

I have used 20 shallots ,

1/4 cup chopped carrots ,

1/4 cup cubed poatoes ,

1/4 cup broad beans ,

few slices of radish

1/4 cup chopped tomatoes ,

1/4 cup beans allow the vegetables to cook with little water,

salt,

turmeric powder .

cover and cook . when the vegetables are almost cooked, add 1 cup tamrind water . allow to cook further till no raw smell of tamrind . add the cooked rice and dal micture, mix well , add hot water for adjusting consistency . add the ground sambar powder , mix well, add chopped coriander leaves .

Tempering

1 tbsp ghee, splutter mustard seeds,

2 red chilies , few curry leaves,

add this tempering to the prepared sambar sadham . add more ghee for added taste . serve with pappadam or any wafer or dry sabji like potatoes roast or arbi fries, sweet potato fries etc . visit my website for many more easy recipes.
