Tomato Kurma

Tomato kurma is the simplest way to make a quick side dish for idli, dosa chapati, and doesnt need any other vegetable except tomatoes which most of us have always stocked . Tomato πŸ… Kurma with idlis and chapatis is always my go to kurma variety when I don’t feel like adding too many veggies in kurma , also to keep it light when I have it with idlis of dosa .

I keep the masalas very minimum to get a hint of the aroma, yet creamy and delicious due to cashew paste .

Ingredients :



To grind to a paste :

2-3 green chillies

15 soaked cashew nuts

3 red chillies

1/4 cup coconut

1 tsp fennel

Grind above to a smooth paste and keep aside .

Other ingredients :

3 chopped tomatoes

1 chopped onion

handful of cooked green peas ( optional )

2 green chillies

1 tsp fennel

2 bayleaves

curry leaves

1 tbsp oil

1 tsp chili powder

1 tsp coriander powder

1 tsp garam masala

1/2 tsp turmeric powder

1 small cinnamon

salt as needed

coriander leaves for garnish



Method :

Make a paste of ingredients mentioned for grinding and keep aside till required .

Take a pan, add oil , add fennel, curry leaves, bay leaves , 1 small cinnamon , sautee till aromatic, then add chopped onions, cooked green peas and the tomatoes . Cook the mixture till little thick by adding little water. Add in the powders mentioned above in the list, add salt, add the ground paste, mix well and cook till a gentle boil .
