Kuzhi Paniyaram
Kuzhi Paniyaram with a batter ground for this . Accompaniments are khara chutney and instant mint coconut chutney.
Ingredients
1 cup raw rice
1 cup idli rice
3/4 cup udad dal
Wash and soak all together , grind to a slightly coarse batter .
Let batter be like that of idli batter .
Ferment , add salt , add sautéed chopped onions tomatoes chilies curry leaves, coriander leaves , asafoetida powder , salt
Tempering for sautéing 1 tbsp oil , splutter mustard seeds, chana dal .
Add the cooled softened mixture to required qty of batter . Add oil to the Paniyaram pan pits , heat it up , add batter about 3/4 th full in each pit of the Paniyaram pan .
Cover and cook and turn them over with a wooden pin so that the batter pours down and cooks to form rounded Paniyaram.
Serve with khara chutney, coconut chutney.
