Kothamalli Thokku, a rich South Indian condiment prepared from fresh coriander leaves, serves as a versatile and delectable companion for various dishes. This flavorful condiment is not only a tasty addition to meals but also a convenient and travel-friendly recipe.
In my typical fashion, I've embraced a shortcut to create this exceptionally delicious coriander thokku—a spicy, fresh, and tantalizing blend that's particularly ideal for complementing curd rice during the scorching summer days.
Utilizing my existing stash of pulikaachal (a spicy tamarind sauce commonly employed in Puliyodharai), I've employed it as the foundation for crafting this thokku. This pulikaachal paste proves to be a quick and handy solution when time is limited or impatience prevails, allowing me to whip up the delightful Kothamalli Thokku without starting from scratch.
Method
grind two cups of cleaned washed coriander leaves , with stems , finely chopped, with some red dry chillies , big pinch of asafoetida powder, a tiny pinch of salt ,( as pulikaachal also has salt , so make sure to add just a little )without adding water. I like to grind a little coarsely .
in a pan add 1 tbsp sesame oil , add 2 tbsp of the pulikaachal paste , add the coarsely ground paste of coriander leaves and red chillies, sautee for 2-3 minutes.
delicious coriander leaves thokku done !
( this cuts time of having to prepare the thokku from scratch, waiting for the tamrind and coriander leaves paste to thicken)
so if you love thokku and dont want to spend too much time in kitchen , follow the above method , we can make yummy bitter gourd thokku, curry leaves thokku, brinja thokku , any variety ..
just keep a big bottle of pulikaachal / puliyodharai paste as the base for any thokku . http://www.youreverydaycook.com/2014/05/temple-puliyodharai-kovil-puliyodharai/
