Kalyana Kesari Sooji Halwa
Delicious rava kesari , esp the one that is served in weddings as morning breakfast with idli, pongal is to die for . Obviously there is a lot more ghee or oil ghee added to get that sliding effect down our throat 😆
However we can have the same delicious rava kesari made kalyanam style by slightly reducing the ghee oil combination and yet achieve the near perfect kesari . Traditionally rava kesari / sooji halwa is usually prepared for all major functions, festivals and poojas , as it is so easy and can be made in minutes without complicated steps .
Recipe
1 cup rava
1 1/4 cup sugar ( increase if you like a sweeter Kesari )
1 tbsp ghee to fry cashewnuts raisins
2 tbsp ghee to fry rava
2 tbsp ghee plus 1 tbsp oil before removing the Kesari from heat .
1 tbsp milk with saffron
2 1/2 cups boiling water
Pinch of cardamom powder or pods
2 cloves ( optional )
Ghee , sugar ,oil will determine the outcome 😁
