Kuzhi Paniyarams
Kuzhi Paniyaram s are soft spongy balls that are cooked in a Paniyaram pan . Usually idli dosa batter is used . However I like to grind separately for preparing Kuzhi paniyarams .
Kuzhi Paniyaram with a batter ground for this .
Ingredients
1 cup raw rice
1 cup idli rice
3/4 cup udad dal
Wash and soak all together, grind to a slightly coarse batter . Let batter be like that of idli batter
Ferment, add salt, add sautéed chopped onions tomatoes chilies curry leaves, coriander leaves, asafoetida powder, salt .
Tempering for sautéing 1 tbsp oil, splutter mustard seeds, chana dal.
Add the cooled softened mixture to required qty of batter . Add oil to the Paniyaram pan pits, heat it up, add batter about 3/4 th full in each pit of the Paniyaram pan. Cover and cook and turn them over with a wooden pin so that the batter pours down and cooks to form rounded Paniyaram. Serve with khara Chutney .
to another batch I IAdded some chopped red bell peppers, yellow peppers, green chillies, chopped tomatoes, chopped onions, shredded cabbage, chopped coriander leaves, pinch of salt. Sauteed lightly with a tempering of mustard seeds, chana dal, curry leaves, added to dosa batter. Enjoy soft paniyarams filled with veggies and have it with green chutney and sambar.
