  1. Wash and cook quinoa with 1 cup water in a pan , add a pinch of salt., let it cook till most of the water is absorbed Wash the kale leaves well, and remove thick veins , chop finely .
  2. Add chopped kale to a bowl, sprinkle some salt , oil olive, toss well .. Roast tofu in a pan , and allow to get a light brownish colour , use olive oil , Grate carrots and keep aside, chop cucumbers to fine pieces,
  3. Now mix all in a bowl with the chopped kale,sunflower seeds, some pine nuts , add pepper, cilantro leaves, add the roasted tofu, and finally drizzle the avocado dressing as needed.
  4. How to make Kale Quinoa Salad Combine all above in a blender , add more lime juice if it is too thick . Pour this over you salad . yummy !
