There are many variations to making this simple nutritious powder , the one below is the most common and simplest one , We prepare this once in a month fresh every time .I avoid buying this podi , as many are not the way we like , some are very smooth almost flour like which we dont like , so if i run out of this podi , sometimes i buy from home makers who prepare exactly the way we love and are sold in small stores with no fancy labels but totally reliable . and always fresh .

delicious podi to go with idlis, to smear generously with sesame oil .
  1. heat a heavy bottomed pan add some sesame oil
  2. fry hard asafoetida , add udad dal to roast till golden and aromatic
  3. separately roast chana dal till lightly golden and fragrant
  4. oil roast red chillies .
  5. on a very low heat roast the sesame seeds and remove when they start popping
  6. cool all ingredients
  7. first grind red chillies with salt and some dal to grind to a little coarse powder
  8. now grind all the ingredients with the red chilly powder ground .
  9. Idli podi tastes good with some grits .
  10. store in an air tight bottle .
  11. serve with idlis and sesame oil to mix the powder .
