udad dal thengoyal
Ulundh thengoyal or murukku is another popular qucik snack made for Janmaashtami.
Yet another easy to fry thengoyal with store bought flours and no processing at home. A boon to busy people who want to surprise their family with quick snacks at a moments notice , using store bought flours, i havent roasted the flours and used them just as they are after sieving them .
Ingredients
1 1/4 cup rice flour
1/4 cup udad dal flour ( store bought or prepared at home by dry roasting udad dal dal, cool and grind to fine powder, sieve it well )
pinch of asafoetida powder,
salt
1/2 tsp cumin seeds or pepper
3 tbsp hot oil or 1 tbsp butter
Method
Prepare a soft dough by mixing dry ingredinets first.
add hot oil mix well adding water little by little .
Heat oil , test the temperature by dropping a small pinch of dough, it must come up sizzling .
Now grease the inside of a murukku press , use the plate meant for thick omapodi and palce a small ball of dough in the press.
squeeze directly in oil or make small rounds of the thengoyal on a cloth and drop into hot oil .
You can also use small ladlle s or spatulas, greas ethe spatulas with oil , press the dough onto the spatula in the requires shape , drop into oil carefully .
remove when they are well done and change colour to light brown .
These thengoyals will become crisp on cooling so dont wait till are very crispy in hot oil , as they will get over fried and too brown on cooling .
