Tamatar Paneer

This is a very tasty, tangy & spicy side dish for rotis or rice that can be whipped up within minutes.
Most often when I have to make a quick side dish within minutes , I choose to make this as it is very quick and the tomatoes cook fast.

Ingredients

5 medium sized tomatoes

2 onions finely chopped

2 slit green chillies

1 small grated ginger

2 tsp chilli powder...Kashmiri chilli powder if possible for the rich red colour.

1 tsp turmeric powder

11/2 tsp mustard seeds for tempering

1 tsp of methi seeds

2 tbsp cooking oil

pinch of Asafoetida powder

salt to taste.

3 tbsp grated paneer

sprigs of coriander leaves

In a heated pan put two tbsp of oil and add the mustard seeds, when it crackles, add the methi seeds and then the slit green chillies and chopped onions. Saute them in oil till the onions become little golden and then add the tomatoes and turmeic powder.Add the chilli powder,asafoetida,salt and cook on low flame till the tomatoes get cooked well with onions. When it all comes together slightly thickened add the grated paneer and garnish with coriander leaves.

Serve with rotis,rice.

Suggestions

If you happen to have tomato puree, you can use it as well and add paneer cubes to this.thickened gravy.

ginger garlic may be added if you prefer.

Kasuri methi also gives a fine aroma to the quick gravy.

Adding grated paneer or cubes enhances the flavour of what would be a very simple dish otherwise.

Do not add water while cooking as Tomatoes become very mushy while cooking.
