Punjabi Garam masala

Garam Masala

Ingredients:

3/4 cup coriander seeds

3 tsp white jeera / cumin seeds

1 tsp black jeera / cumin seeds

10 green cardamoms

3 black cardamoms

1 stone flower

1 tbsp fennel

8 -10 cloves

3 cinnamon sticks

2 tbsp black pepper

2 mace

1 star anise

4 bayleaves

4 red chilies

3 byadagi red chilies ( optional )

1/2 of one nutmeg

1 tsp dry ginger powder

Method

Take a pan and lightly dry roast the masalas one by one.

let it cool and grind to a fine powder.

Store in an air tight box.

This is a very handy powder to have for all your North Indian dishes which calls for use of garam masala.
