Potato kurma | vellai kurma
Delicious simple white kurma with just one or two vegetables .
One of the simplest side dish is the potato white kurma, as almost all households stock on potatoes , onions and tomatoes . These are basic veggies we find in our kitchen most of the time .
Try this simple thin white kurma which is a great accompaniment for many dishes like idlis, dosa, chapati, naan, idiappam. Almost thin stew like , check out this simple easy one veg kurma.
The recipe is a simple one , assuming we do not have many vegetables except 1-2 potatoes , so we can still make a yummy kurma .
The basic reipe is the same even if you add more vegetables, you need to adjust spices accordingly, more green cillies,more coconut , adding more garlic is upto your choice
Ingredients
2 small peeled cooked potatoes
1 small carrot ( optional , but adding one lone carrot gives a nice look to an otherwise dull white kutma )
1 tbsp oil
1/2 tsp fennel
1 small piece of cinnamon
3 cloves
3-4 green chilies or as preferred.
some curry leaves
1 bay leaf
1 small onion finely chopped
3-4 Mashed cooked potatoes or cubed .
1/4 cup grated or chopped coconut
2 garlic cloves
Few almonds or cashewnuts
1 tbsp fennel
1 tbsp soaked poppy seeds
salt
Chopped coriander leaves for garnish .
Method
heat a pan add 1 tbsp oil
1/2 tsp cumin seeds
1/2 tsp fennel
1 small piece of cinnamon
3 cloves
Fry all these in oil lightly till aromatic
Add chopped green chillies some curry leaves ,
1 bay leaf
1 small onion finely chopped
1 boiled cubed carrot if you have it . I had few green peas left over, so added them too.
add mashed cooked potatoes or cubed if you like ,
I added them mashed as it gives good texture to the gravy .
Sprinkle some water and now allow this mixture to cook with roasted spices .
Meanwhile take a mixie jar.
add 3 green chillies,
1/4 cup grated or chopped coconut
2 garlic cloves
Few almonds or cashewnuts
1 tbsp fennel
1 tbsp soaked poppy seeds
Grind all these to a smooth paste .
Add salt to the vegetables.
Add the ground paste and some water from the mixie jar.
Dilute the kurma, as you want it thinner .
Allow to cook on a low flame for a minute or two to allow the ground paste and the vegetables cooking in spices to blend well .
Remove and garnish with chopped coriander leaves serve with chapatis, Idiappam, idlis, dosa, aapam, or even with rice .
