Poricha kuzhambu and rice appalam for me . When a few odd veggies remain , it's Avial or Poricha kuzhambu !

I use my home made instant Poricha Kuzhambu powder to quicken the process . Few chopped veggies , cooked dal , 2 tbsp of the powder , salt , curry leaves , asafoetida powder , ground coconut paste / or coconut milk powder . 3-4 whistles in pressure cooker .

You can add roasted powdered toor dal and coconut milk powder to the roasted spices , powder it and store . That's even a great time saver . .

Poricha kuzhambu, porita kuzhambu , is a great one pot meal for bachelors, or a busy person , as you dont need any other dish except rice to go with it .

An authentic Tambram dish made usually in parts of Tamilnadu , esp in Thirunelveli side. Usually one or many types of odd vegetables are used, which are left over , so a single one pot dish can be made and served with rice and just a papad, to make a complete meal as lentils are are also added with some aromatic ground spice and coconut .

Please note i have given measurements for a bulk powder mix to be prepared in advance , use 1-2 tsp or as needed for the recipe shown above. store the rest in a container for other times.

The ready to use powder is a boon and a great time saver so you can quickly make a one pot meal of veggies, this powder, some grated or ground coconut , cooked dal in one cooker and have a complete meal .

This is great for travelers , bachelors with limited kitchen facilities, can be cooked in microwave too in small servings if you have this powder in hand ready . Ingredients ( for one or two servings )

You can scale up in proportion to make a bulk mix of this powder to save time of roasting and grinding the powder every time you want to make poricha kuzhambu .

To be roasted and ground .

( use pepper and chillies as per yourpreferred spice taste . )

2 tsp udad dal

1 tsp cumin seeds

1 tsp rice

1/2 tsp pepper

3-4 red chillies ( according to preferred spice )

pinch of asafoetida crystal

1 tsp sesame oil for roasting

1/4 cup fresh coconut grated , to be ground to paste .

1/2 cup cooked mashed toor dal , add more for more vegetables .

1 cup mixed vegetables pieces ( i have used potatoes, avarakai / flat beans , red peppers, beans ,chow chow )

salt as needed

turmeric powder

some curry leaves

for tempering

1 tsp sesame oil

1 tsp chana dal / or udad dal ,

mustard seeds,

red chilies,

the consistency can be adjusted as per ones requirements , little loose to mix easily with rice or as a side dish too keeping it thick and filled with many vegetables. A very healthy meal by itself .
