    Method

  • Pirandai when handled without washing will cause itching , so first wash them well , dry on a cloth , then apply coconut oil or sesame oil on both hands before continuing to process them for cooking .

  • First , remove the extra veins, tendrils, and small leaves, , then chop at the segments , joints, which break off with a light twist . Choose tender pirandai for cooking as they tastegood and fresh ,the more mature ones can be used to make Pirandai oil .

  • Usually , when we break off at the joints, we can easily peel them off from four sides, how ever it may cause itching , so beter to use a good peeler , to pull away the exterior skin . The inner suculent part is what we need for cooking .

  • Wash and clean Pirandai stems by discarding leaves , peeling off the outer skin carefully after applying oil on hands .

  • Chop all the stems .

  • Add oil to a pan , add the chopped stems of pirandai ,

  • allow them to fry till almost crunchy to remove moisture .

  • add a drop of oil to fry the asafoetida , roast till they puff up .

  • Remove . Next roast thec individual dals , oil fry chilies , curry heaves , pop the sesame seeds , all separately as shown .
