Peanut barfi
Peanut chikki or brittle or peanut balls can be made by roasting peanuts, shelling the peels, and breaking into halves,. add these to a thick jaggery syrup of hard ball consistency .
mix quickly and roll small portions into balls .
Another method is to spread the mixture of jaggery and peanuts on a greased plate and use a greased rolling pin to flattern into a square . Break off into small squares .
Ingredients
1 cup peanuts
1/2 cup jaggery
pinch of salt
1/4 cup fried gram ( optional )
2 tbsp sesame seeds (optional )
1 tbsp kopra ( dessicated coconut ) also optional
Adding fried gram, sesame seeds and kopra will give a delicious taste ,
Method
Roast peanuts, remove the skins and use.
Melt jaggery with little water top prepare a hard ball consistency suryp , when you roll the syrup, it must form a hard ball , firm and non sticky.
At this point switch off the flame, quickly add required peanust halves and friend gram, mix well with wooden ladle, take small portions and roll into balls, or spread on a greased plate, and slice into small squares .
