Nankhatai
Delicious nankhatai, indian cookies perfect for tea time can be made within minutes in batches and stored, makes a perfect gift also. These Nankhatai biscuits are seriously addictive cookies . 😋😋 .Indian cookies made bakery style ..i had to bake at least three times so that i get good pics for my post and video before they all vanished ..😂..awfully easy and anyone can bake them ...so if you have taken them out of the oven even few seconds early and they dont look done, simply put them back and continue baking ..the aroma and the light golden tinge was the cue for me to take them out perfectly done .check the video .
Ingredients
1 cup Ghee
1 cup ( or 3/4) cup powdered sugar ..depends on how sweet you like the biscuits .
1/2 cup Maida
1/2 cup Whole Wheat Flour
1/3 cup very fine Semolina or chiroti rava
1/4 cup besan ( kadalai maavu )
½ tsp. Baking Powder
¼ tsp. Baking Soda
pinch of Cardamom Powder
tiny pinch of Salt
sliced Pistachios or almonds for garnish
Method:-
1. Take a bowl and beat sugar and ghee till creamy and looks light .
2. In another bowl mix all dry ingredients well .
3. add the creamy sugar ghee mixture to the dry flours mixture, mix well with a spatula,
or with fingers to form a smooth dough
If mixture appears too dry , add little more melted ghee to help bind well.
4. Chill this dough for 10 minutes in fridge
5.preheat oven to bake at 180 C
6. Take out dough and shape into small balls and place on a greased tray .
add some pistachio slices on top for garnish by pressing lightly with fingers,.
arrange the biscuits dough on the tray and bake at 180 degrees C for 12 minutes
( time may vary from oven to oven , so check on the biscuits during baking) .
These biscuits can be taken out while lightly golden and they will become crispy or crumbly after cooling well for 10 minutes .
