Mor Kozhambu Powder

Having an instant homemade powder to whip up delicious Mor kuzhambu whenever the craving strikes, without the need for grinding and in just a few minutes, is truly a blessing. While it's not overly laborious to grind a small quantity of coconut paste with spices, having such recipes at hand proves invaluable, especially during transitions like moving to a new city and residing in temporary accommodations. In such situations, relying on eating out all day isn't feasible.

The beauty of this homemade powder is its convenience. You can even pair it with a small packet of coconut milk powder, along with instructions on usage. This way, your loved ones simply need to open the packet, measure out the required amount of powder, and voila! A delectable buttermilk curry is ready, whether with or without vegetables.

With most stores stocking buttermilk packs or yogurt that can be whisked to a thinner consistency, adding some chopped vegetables like pumpkins and this instant powder ensures your delicious Mor kuzhambu is ready in 7 minutes or less. It's a perfect solution for those hectic days when time is of the essence.

Ingredients:

3 tbsp coriander seeds

1 tbsp chana dal ( bengal gram )

2 tbsp toor dal ( split pigeon peas)

2 tsp cumin seeds

4 red chillies or as per your preference . if you want morkuzhambu to be white , then do not add red chillies, instead dry roast green chillies and use in recipe .

1 /4 tsp black pepper

1/4 tsp fenugreek seeds ( methi) ( can be added to tempering or to the mix )

2 tbsp rice flour or pottukadalai powder / fried gram dal powder

10-12 curry leaves

1 tsp turmeric powder.

salt can be added to mor kuzhambu .

Method

Take a pan and dry roast ingredients except the powders and curry leaves.. and till they are browned and crispy. Roast the curry leaves separately.Add the powders later.

Add roasted crushed curry leaves and add it to prepared powder and do not grind with other ingredients..

Let it cool and then grind to a fine powder along with the rice powder/ pottukadalai powder and turmeric powder.

Notes :

  1. prepare the mix and add coconut milk powder to the mix, seal and keep .

    Add roasted tadka ( tempering of mustard seeds, red chillies and roasted curry leaves, add all this tempering to the mix prepared so , you can save the effort of even making a tadka .

  2. you can also grind to powder some dessicated coconut powder along with above to prepare a mix with coconut , shelf life will be about 2 months .  

To prepare a simple mor kuzhambu.

Ingredients:

1 cup chopped vegetables like pumpkins or chayote/ chow chow

1 cup slightly sour buttermilk whisked

salt as needed

some curry leaves. ( optional as the powder has some in it)

2 tbsp of prepared home made mor kuzhambu powder.

1-2 tbsp coconut milk powder, or coconut milk.

To temper

1 tsp coconut oil ( preferred)

1/2 tsp mustard seeds

1/2 tsp split udad dal

1-2 red dry chilly.

Note

To streamline the process even further and make it even quicker, consider adding the tempering directly to the mix itself. This not only saves time but also reduces effort, particularly handy when kitchen space, ingredients, and utensils are limited. This approach proves especially useful for bachelors, who often seek convenient and swift solutions in the kitchen.

Method:  

Take a pan, add some chopped pumpkins ( ash gourds or yellow pumpkins or usual vegetables you like in a mor kuzhambu)

Add little water to cook the vegetables.

Add 2 tbsp of the prepared mor kuzhambu powder.

Add a little salt.

Keep some thick slightly sour buttermilk whisked and ready to be added.

Add the whisked buttermilk when vegetables are soft , add a tbsp of coconut milk powder , if you have , mix well

Tasty mor kuzhambu is ready.

If you have coconut milk powder or coconut milk from tetra pack and would like to have it in your mor kuzhambu , add it along with simmering vegetables and the prepared kuzhambu.

Definitely perks up the taste.

Temper with mustard seeds, curry leaves and 1 red chilly .

Your instant mor kuzhambu is ready in minutes.

Microwave makes it even faster.

Note.

Do not allow to boil too much after adding buttermilk as it will split and not tasty .
