Malai Paneer
Yet another scrumptious dish to go with your yummy vrat ka jeera rice or Faraali parathas, rotis is this amazingly simple dish that s just perfect for a fast , can be cooked under 10 minutes if you have home made paneer ready for use.
Ingredients:
1 cup cubed paneer ( cottage cheese)
1 cup cream ( low fat )
1/4 cup cashewnuts kept in hot water to blanch.
1/4 cup melon seeds ( skip if you dont have them )
1/4 cup fresh curds
2-3 tbsp milk
2-3 tbsp freshly chopped dhaniya leaves
Other masalas
2 cardamom
1 bay leaf
oil /ghee for cooking
3-4 pepper corns
1/2 inch cinnamon piece
2 tsp coriander seeds
3-4 red round chilies ( boriya)
sendha namak ( rock salt)
1 tsp cumin seeds, keep 1/2 tsp of cumin seeds for tempering.
2-3 cloves
1 tbsp butter
1 tbsp ginger green chillies paste. or use fresh green chillies a piece of ginger while grinding
Method
First let the paneer cubes remain in warm water to soften them a bit.
Roast all the dry spices like coriander seeds, cloves,bayleaf, cardamom pieces, pepper, cinnamon, cumin, red chillies.
Powder them in the mixer. Keep aside.
In a pan add some butter or ghee, add some cumin seeds, green chillies and ginger paste, sautee lightly, then add the paneer pieces trying not to crumble them.
Add 2-3 tbsp of milk to cook them a bit while you get the masala ready.
Grind to a paste the cashew and melon seeds, keep aside.
Add the ground masala powder, dhaniya leaves, salt, add the cashew melon paste, finally the curd and cream. Let it cook on a very low flame till gravy thickens.
The curd is added to give a light tang to the dish , where normally a paste of onions and tomatoes is used in the base gravy.
Serve with parathas, or vrat ka jeera pulao
