Delicious Coconut 🥥 milk Thengoyal | white Chettinad Thengoyal.

There is no need to prepare the flour at home . Good branded flours are easily available and for convenience you can always opt for such flours . I have used only store bought raw rice flour ( even idiappam flour can be used )

I have also used store bought udad dal flour . However if you are unable to get udad dal flour from stores , you can look online for it . Otherwise just fry roast udad dal , blend it to a smooth fine powder , sieve and store . Use it in Diwali snacks recipes which uses udad dal flour .

Coconut 🥥 milk Thengoyal | Chettinad White Thengoyal

Ingredients:

3/4 cup store bought raw rice flour

3/4 tbsp udad dal flour ( either store bought or roasted , ground to fine powder , sieved well )

1/4 cup coconut milk ( used store bought coconut milk powder )

Water as required to prepare dough .

Thengoyal press

Oil for frying

1 tbsp soft butter

Salt

Method :

Prepare a soft dough with ingredients.

Heat oil , allow to heat , test with a pinch of dough . It must sizzle in oil .

Now either squeeze directly into hot oil or press onto greased spatula as individual pieces . Drop in oil carefully , flip and cook till done . Do not allow these Thengoyal to turn brown . They will get ready when they are white and about to change colour . Remove and drain .

Store in a dry airtight container.

Tips :

you can use sesame seeds , or cumin seeds , asafoetida to the dough . I have skipped all these as the coconut milk must be a dominant flavour and aroma .
