Broccoli cheese sandwiches

I enjoy sandwiches as much as anyone else and not a only idli dosa kind of person 😁 in fact I bake religiously all my own whole wheat breads with some healthy stuffs so that I can reduce or completely avoid the unwanted ingredients in my breads and the thought comforts me too .

So this was one of the many varieties of sandwiches or cheese toast that we relished so much i skipped my lunch as it was veggie filled and heavy. So this happened .

Broccoli,spring onions, corn cheese sandwiches....when you want to finish off the side dish..from ...( brunch ) why not 😁Practically a no brainer.

Ingredients.
1. Some broccoli florets, blanched. ( and drained well )

  • 1/2 cup sweet corn, some coarsely pulsed.

  • 3 small green chillies finely cut.

  • 2 tsp pizza mix powder ( available everywhere )orseasoning of your choice
    salt ..a pinch.

  • some chopped spring onions, the white part and the greens too.
    Grated cheese...to sprinkle between layers of bread and on top of the filling so that the breads will hold well.

  • Butter to spread on one side of each bread while toasting first.

  • Pinch of white pepper., garlic powder or onion powder .

  • Slices of whole wheat bread.

    Method

    Filling.

  • Wash , clean the florets, plunge in very hot boiling water with salt. Keep covered.

  • After few minutes, remove the broccoli florets, drain well.
    Heat a pan, add a tsp of oil.

  • Keep pan in medium flame, add the broccoli florets, shelled corn, the pulsed corn, green chillies,spring onions , salt, the pizza powder, onion powder or garlic powder , ifyou dont have both use a small tbsp of fresh onion garlic paste but make sure to sautee well seperately so that it doesnt taste too raw.

  • Keep stirring on a high heat as we need a filling that is not damp.

    Let the filling cool well.

    To make the cheese toast sandwiches.

    Use a grill if you have one.

  • Butter one side of a bread, place on a hot skillet/tava, sprinkle cheese on the top part, place filling on the grated cheese, again sprinkle cheese on top so that the bread will hold the fillings, while getting toasted/grilled

  • Place the other side of bread on top to cover the filling, and toast both sides on medium heat, carefully remove and toast both sides well, place a heavy object on top if doing on a tava ,

  • I use my roti marble slab, very heavy and useful !.so that the sandwich remains in place, the melted cheese will keep the filings together.

  • Remove and eat while it is hot and crunchy .

Yummy home made spread for bread .

I don't buy any spreads for bread as I rarely have bread for breakfast . But when I feel like it , I make my own spread with few ingredients easily available and it tastes satisfying .

The green chutney like spread has :

2 green bell peppers

Chopped green chillies

Garlic powder

Salt

1 tbsp cream cheese ( can sub with butter )

Some coriander leaves

Some baby spinach leaves

Blend well till smooth without adding water .

This also tastes good as a spread for dosas ( sub with red bell peppers and red chillies for Masala dosa )
